FRESH FORK MARKET ANNOUNCES THE RETURN OF BRAISING CLASS
Local Farm Buying Club Offering A Class On Braising And Fall Vegetables
9/4/2013, 12:46 p.m.
Cleveland, Ohio - Fresh Fork Market is a subscription to local foods. Each week, for 22 weeks during the summer, customers meet the Fresh Fork Market trucks at one of their predesignated pick up locations. The products that subscribers enjoy each week come from Ohio farms that are within 75 miles of Cleveland.
As the weather cools and produce shifts to fall vegetables, subscribers to Fresh Fork Market receive more foods that are less a part of their daily routine. That is why FFM is offering a returning class:
Braising and Fall Vegetables. This class will focus on the less popular cuts of meat and the vegetables that pair with them so well. The class will be held at Market Garden Brewery, 1947 W 25th St Cleveland, OH 44113. It will take place on Monday September 16th, from 6-8 p.m. The cost for the class is $25.
The class will be taught by Chef in Residence and local foods expert, Parker Bosley. Bosley has long been a fixture of the local foods scene. The restaurant that he opened in Ohio City was one of the first to play with the Farm to Table Concept. Now working with Fresh Fork Market and as a consultant to local farmers, Parker loves teaching classes.
The focus of this class will be cuts of meat that require more attention to prepare, and thus are often overlooked, even though they may offer wonderful flavors when prepared properly. This time of year, root vegetables are prevalent and pair quite well with meats that are slow cooked and braised.
“Questions that (Fresh Fork Market) customers ask often involve root vegetables, like turnips, parsnips, and squash,” states Parker Bosley. “The flavors of fall are just as tempting as the vegetables of summer, if you know how to make the most of them.” That is why FFM offered the class last year to a sell out crowd-and why they have chosen to offer it again.
